Satay, or sate in Indonesian and Malaysian spelling, is a dish of seasoned, skewered and grilled meat, served with a sauce. And Pork Satay or in Thai cuisines calls Moo Satay (Moo is pork in Thai), is one of the exotic menu from Southern Thailand and is palatable from the aromatic spices that penetrate into the meat together with a flavorful peanut sauce and served with slices of cucumber and shallot pickle that will leave you refreshed.
For the foreigners who come to visit Thailand have also put this menu as one of the top most favorite Thai dishes as well. And we can enjoy this menu to cook by ourselves and this can be the alternative menu for your next BBQ party. Here we present you a recipe which is very delicious and easy to cook.
Pork Satay Recipe
Ingredients:
- Pork meat (tenderloin, or loin) 1 Kg
- Roasted coriander seeds 1 ½ teaspoon
- Roasted cumin 1 ½ teaspoon
- Sliced lemongrass 3 tablespoons
- Sliced galangal 1 teaspoon
- Kaffir lime peel ½ teaspoon
- Fine sugar 2 tablespoon
- Sweetened condensed milk 6 tablespoon
- Turmeric powder 2 teaspoons
- Cooking oil ¼ cup
- Unsalted butter, melted 3 tablespoons
- Ground salt 1 teaspoon
Directions:
1. Rinse pork and drain well, then slice into 1 x 4 inch in length and set aside.
2. In mortar, pound coriander seeds, cumin, galangal, lemongrass, kaffir lime peel, and salt until it is a paste and add to pork, add sweetened condensed milk, sugar, turmeric powder, oil and butter, mix well and marinate about 1-2 hours.
3. After marinate, stab the meat onto a stick. Then mix fresh milk and coconut milk about 1 cup to use when grill.
4. Dip the meat into the coconut milk mixture and grill on brazier over medium heat, flip the meat stick continuously and sprinkle coconut milk mixture while grilling to make the meat to be juicy. When the meat turns its color to light yellow so it’s done.
5. Serve with peanut dipping sauce and slices cucumber and shallots pickle, and eat with toast or nan bread.
Tips: How to grilled Pork satay
- Prepare a roster to be ready, can be aluminum or iron roaster. Anyhow, the original style use charcoal brazier which enhance the taste and fragrance of Pork Satay more.
- Charcoal to use with the roaster, recommend to be mangrove charcoal that is better to be heated and provides more fragrance for Pork satay than other as well.
- Sprinkle coconut milk mixture on pork during grill to keep the pork to be juicy.
- Turn the pork once sprinkle the coconut milk mixture, otherwise the pork may be burnt.
- To check the pork is cooked by it turns a color, overcook causes to over dried pork.
Satay Dipping Sauce
Ingredients:
- Dried chili (Large) 10 seeds
- Ground salt 1 teaspoon
- Sliced galangal 2 teaspoons
- Lemongrass 2 ½ tablespoons
- Kaffir lime peel 1 teaspoon
- Coriander roots 1 tablespoon
- Peeled shallots 30 grams
- Garlic 1 tablespoon
- Shrimp paste 2 teaspoons
- Palm sugar ¾ cup
- Fish sauce 1 tablespoon
- Tamarind paste, squeezed in warm water to get juice ½ cup
- Roasted grinded peanut 1 cup
- Undiluted coconut milk 4 cups
- Cooking oil 3 tablespoons
- Chili oil (can get from chili paste) for topping
Directions:
1. In mortar, pound together dried chili and salt, then add galangal, lemongrass, kaffir lime peel, coriander roots, shallots, garlic and shrimp paste until it is a paste.
2. Heat the pan, add oil when it is hot and add chili paste, stir well until its fragrance comes out. Then add coconut milk gradually and seasoning with fish sauce, palm sugar, tamarind juice and roasted peanut, stir well then take out from the heat.
3. Top with chili oil.
Slices Cucumber and Shallot Pickle
Ingredients:
- Vinegar 1 cup
- Water ¼ cup
- Ground salt 1 teaspoon
- Sugar 1 ¼ cup
- Shallots
- Cucumber
- Fresh chili (Red and Yellow)
Directions:
Mix vinegar, sugar, salt and water and heat over low until the mixtures are melted and bubbling, then turn off the heat and cool down. Then add cucumber, shallots and chilis and serve with Pork satay

Selection of meat to make Satay is one of the important parts because whether it will be delicious or not depends on any part we select. Recommend to use tenderloin pork since it is the best with its tenderness and is the tastiest. If use pork loin, it will be chewy not tender.
